Vegan Cacio e Pepe


Soak the cashews for around 2 hours. 

After that put the pasta to boil. In the meantime prepare your cream, mixing together with the help of a kitchen mixer the cashews, pepper and salt.

 Once it is done transfer it in a pan and add 3 spoons of boiling water from the pasta. Let it warm up a bit and at the lowest temperature possible and mix together until creamy. 

If needed add some more water. When the pasta is ready take away all the water and mix it together with the "cheesy cream". 

Serve warm with some vegan grated cheese on top or as it is.

Pasta, (whatever type. I chose bucatini for my recipe)

200g cashews 

Pepper to taste 

Salt to taste
